With it being a new year, I was in the mood to find a new recipe for my slow cooker. Something that would not only be good on game day, but also any day of the week at home. In my search to find something I’ve never tried before, I stumbled across this recipe for Slow Cooker Mexican Shredded Beef from House of Nash Eats.
Much like my other slow cooker recipes, this one appeared to be pretty simple and straightforward, which I’m all about. I also liked the versatility of the beef itself, as it can be used to create amazing nachos, tacos, burritos, and more. I started with a 2.5 pound beef shoulder roast and didn’t do any additional trimming as it didn’t appear to need it. Once I seasoned it with salt and pepper I placed it in the cooker. I then diced a medium onion and added all the remaining ingredients into the pot. After a good stir I placed the lid on and set the cooker to LOW for about 9 hours. At that time I pulled the roast apart with 2 forks and kept the meat in the pot on KEEP WARM to soak in some juices. I found the beef to be so tender that it was falling apart as I was trying to bring the roast out! For this time around, I used the meat to make burritos and they were fantastic 🙂
One area where I slightly deviated from the recipe was not searing the roast before putting it in the slow cooker. I didn’t have the time to do that step, but I may do it next time and see if I notice any difference it taste. Overall though, I’m really happy with how this turned out. The beef was so tender and flavorful. I highly recommend trying this recipe at your next tailgating event or if your hosting the game at your house. Since this does take quite a bit of time to cook, depending on when you tailgate, you’ll want to plan ahead and have this cooking the night before or early morning the day of.

First: Start off by seasoning your beef with salt and pepper on all sides of the roast.
Second: Place the roast in the slow cooker and add all the remaining ingredients, stir and mix everything together, then cover with lid.
Third: Set your cooker to LOW and allow 8 to 10 hours for cooking, until the meat is tender and shreds easily. When the roast is done, remove from slow cooker and shred.
